Aromas of barrel spices, some wild tropical fruit suggestion as well peach, sweet grapefruit and quince. There’s a light hay/grass/bell-pepper note. On the palate - dry, textured and fruity with citrus and sour peach then lemon and and barley sugar. Plenty of acidity, loads of texture and bite from the skin contact and wild indescribable flavours form the wild ferment.
